I feel like this time of year everyone is busy – either going on last minute vacations, wrapping up those summer projects and heading back to school. We are staying busy and trying to get to the gym a little more often – time to shed those summer lbs and get ready for our wedding next spring! I love easy meals and nothing is easier than tossing a few things in the crock pot and coming home to a meal that is ready to eat!
My favorite is my 2 recipe beef stew. This is so easy guys – you really can’t mess it up!
Ingredients
- Roast ( I use chuck roast, eye round roast or the precut – this seems to be on sale pretty often!)
- 1 package of Lipton’s French Onion Soup Mix
Here is ALL you do. Get out your crockpot, toss in the roast or beef, stir in one package of the soup mix and then add enough water to almost cover the meat. (So maybe there is three ingredients – but you know what I mean).
I cook mine on low heat all day long and when I get back it is so tender and sitting in the most amazing gravy!
I promise you will not be disappointed! This is the easiest, best tasting weeknight meal I have found yet!

When visiting my sister a few weeks ago in Hilton Head, I noticed these super cute bracelets she was wearing…..
She works at a camp during the summer and they sell these bracelets to raise money for the Pulsera Project, whose mission is to create a more just and colorful world through the education and empowerment of Nicaraguan and US youth.
Each bracelet comes tagged with the picture and actual signature of the artist. I thought this was super awesome!
They cost just $5 each and all of the money goes right back to the charity. On my way out of town, I stopped by my sister’s summer camp to say goodbye and check out the bracelets. There was a HUGE bag and they were all so beautiful! It was way too hard to pick just one, so I settled on these two….

This week my facebook page has been full of my friend’s kids heading off to school. I love all the first day of school photos full of bright smiles, wide eyes and excitement to head off to school!
This morning I came across this video of an amazing teacher. Comments from the students were: “i never fell asleep in his class”, “he really cares about me”, “he teaches me stuff I can take into the world”, and my favorite “when I am 75 years old, this is the teacher I will still remember”. How amazing huh? Wouldn’t it be great if we could all send our kids (or future kids) to teachers like this?
