We all enjoy a little party over here at Sunny Slide Up.  You might remember our jello shots post from last year.  Well, this recipe is even easier than jello shots.  Introducing…..

Rummy Bears

 

To make rummy bears…

Just dump a bunch of gummy bears in a large Tupperware container – short rectangular works best.

Then just barely cover the bears with rum. A 5-6 lb. bag of gummy bears plus a regular size bottle of rum. (Not the large size you see in the picture above)

Place in the fridge and pull out to stir once a day. Works best if they soak for 3 days, but 2 is ok.

They will enlarge, so don’t fill the container all the way!  Best to use two containers for 5-6 lbs. of gummy bears.

Guaranteed to be a huge hit at your party!

I am absolutely in love my new breakfast discovery, so I must share!   These are so easy to make – and while you are at it make a whole dozen to last for a few days.  They easily heat up in the microwave (just wrap in a paper towel for about 50 seconds).

Breakfast Egg Cups

  • Canadian Bacon Slices (12 for a dozen egg cups)
  • 6 large eggs
  • 1 cup or so of shredded cheese (I prefer cheddar)
  • Cherry tomatoes (about a cup full) quartered
  • Garlic Salt
  • Salt and Pepper

DIRECTIONS:

Spray a muffin tin well with non-stick spray.  Place one slice of canadian bacon in each muffin tin.

Scramble your eggs together with a tablespoon or two of water and seasonings (garlic salt, pepper).  Spoon egg mixture evenly into each tin (I typically use a 1/4 cup for this).

Sprinkle in some shredded cheddar cheese (or whichever you prefer) and place a couple of quartered cherry tomatoes in each cup.  Take a fork and push the tomatoes and cheese down into mixture.  Don’t worry if the egg mixture goes underneath the ham.  It will pop up when baking.

Bake at 350 degrees for about 15-18 minutes just until eggs set.  Pop them out of tin with spoon and enjoy!

I love this recipe.  I have been wanting to share this with you for some time, but I always forget to snap some photos before I gobble it up.  Well, I finally remembered the other night, and here you go.

The Easiest Turkey Pesto Meatballs

This is so easy and has just a handful of ingredients.  It literally takes like 45 minutes tops to prep and cook.  Plus, it is turkey so a way more healthy choice for meatballs.  Be sure to pair with your whole wheat pasta and nice green salad too!

The Easiest Turkey Pesto Meatballs

 

INGREDIENTS:

1 pound ground turkey breast
1/2 cup of pesto
1/4 cup of breadcrumbs (whole wheat if you can find them)
1/4 cup of parmesan cheese
2 tablespoons of minced garlic
1 tablespoon of Italian herb mix
1 jar of tomato pasta sauce

 

DIRECTIONS:

1. Preheat oven to 350 degrees.  Spray bottom of casserole dish with non-stick spray.

2.  Pour sauce into bottom of casserole dish.

3. Mix together the turkey, pesto, breadcrumbs, parmesan cheese and garlic with your hands to combine and roll into balls about 2 tablespoons large.  Could make smaller if you prefer.

4. Place the meatballs on top of the sauce and COVER dish.

5. Bake for about 25-30 minutes.  Shorter if you made smaller meatballs.   Cook your pasta while these are in the oven.

6. Serve with pasta of your choice, a dash of mozzarella cheese maybe or parmesan shreads….and don’t forget the salad!
