As the colder weather approaches, I find myself craving a big bowl of warm soup for dinner. Pair this with some cozy socks, a fireplace going and a DVR full of my favorite TV shows and…happiness! I have been on the lookout (thanks Pinterest) for some great new soup, stoup, chili, stew – whatever you may call them – recipes. Maybe it is the little bit of German that I have in me, but I absolutely LOVE a good Oktoberfest. The music, the culture, the dancing, the food and the beer!
This past weekend, The Mister and I headed to Winston Salem to go to an Oktoberfest with his parents and some of their friends. It was SUCH a great time!
You first walked in to this beautiful building that is an old federal building. Just look at those ceilings.
Then, I saw the room of quotes – can I have this room in my house one day?
Everything about this festival was so well done! I just had to get my photo taken with the dancers… I think I need a dress like that, you know… just incase!

The Mister said that the brats were “awesome”
And the cake table… beautiful perfection.
I have decided that I may take a stab at making some German food.
Possibly a Black Forest Cake (recipe from allrecipes.com)
or German Potato Salad? (recipe from allrecipes.com)

It was such a great night! We had an amazing time – I would tell anyone to go experience an Oktoberfest near you! And if it couldn’t get better… check out this fab mirror I found as we were heading out — best bathroom mirror ever!

I feel like this time of year everyone is busy – either going on last minute vacations, wrapping up those summer projects and heading back to school. We are staying busy and trying to get to the gym a little more often – time to shed those summer lbs and get ready for our wedding next spring! I love easy meals and nothing is easier than tossing a few things in the crock pot and coming home to a meal that is ready to eat!
My favorite is my 2 recipe beef stew. This is so easy guys – you really can’t mess it up!
Ingredients
- Roast ( I use chuck roast, eye round roast or the precut – this seems to be on sale pretty often!)
- 1 package of Lipton’s French Onion Soup Mix
Here is ALL you do. Get out your crockpot, toss in the roast or beef, stir in one package of the soup mix and then add enough water to almost cover the meat. (So maybe there is three ingredients – but you know what I mean).
I cook mine on low heat all day long and when I get back it is so tender and sitting in the most amazing gravy!
I promise you will not be disappointed! This is the easiest, best tasting weeknight meal I have found yet!
