This recipe came from a book of local and family recipes that was giving to me by my aunt. Several months ago I came across it and discovered it’s the perfect quick meal for my family! As many of you know I’m vegan, so I have included (in parenthesis) the vegan ingredients I use to prepare this meal for myself! All you need is:

2 tubes of crescent rolls (make sure they are vegan friendly-not every store has these)

1lb. of ground beef (vegan beef-less crumbles)

taco seasoning

1 can of refried beans (vegan- without any animal additives…obviously)

1 12oz. bag of sharp cheddar or Mexican blend shredded cheese  (vegan soy shredded cheese)

**When making this vegan, I like to spice up the recipe a little with some chopped onion, tomato, black olives and garnish with fresh avocado. It helps add a little more flavor!

Taco Bake

*If the middle of the dish is still not cooked throughout, I will cover with aluminum foil and cook an additional 3-5 minutes

Enjoy!
